Peanut-buttery Snicker Doodle Cookies

Afternoons can be hectic even for the most organized mom; the kids are just home from school; you're trying to figure out what's for dinner...only to be surprised by a very lengthy phone call from your mother in law. And, that's about the time your ten year old announces loudly that he forgot to tell you about the PTA meeting ...which is tonight, in less than two hours...which you are expected to attend...and you should bring something for the buffet table... OK! What to do? Panic? Yes, that's one option...but more realistically, you could try this simple to prepare cookie recipe, that has gotten me out of more than one jam. It's so easy to make--and goes from bowl to oven to mouth in just about twenty minutes. It uses most of the ingredients you already have in your pantry and fridge and tastes so ooey-gooey good, you'll be the envy of all the other PTA moms! Now, that's a recipe for success, moms! Peanut-buttery Snicker doodle Cookies-- You'll need: 1 cup sugar 1 tbsp. peanut butter softened 1/2 cup butter or margarine -- softened 1/2 cup shortening 1 teaspoon vanilla 1 egg 1 3/4 cups all-purpose flour 1/2 teaspoon ...
... baking soda 1/4 teaspoon salt 1 cup Reece's peanut butter cups or snickers bars, or Hershey's chocolate bar (broken up into small pieces) ...any candy bar or mini candy bars you happen to have on hand. Pre-heat oven to 375 degrees. This step is very important, as cookies will not cook evenly or properly if they do not start the baking process at 375 degrees. Beat sugar, butter, peanut butter, shortening, vanilla and egg in large bowl with electric mixer on medium speed, or mix with spoon. Stir in flour, baking soda and salt. Stir in candy bar bits.. Blend again. Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 10 to 12 minutes or until edges aregolden brown (centers will be soft). Cool 1 to 2 minutes; remove from cookie sheet to wire rack. Optional cookie icing for twelve cookies: Double or triple this icing recipe depending on how many cookies you have baked. 6 tsp. peanut butter, warmed, any brand, i.e. Jif, 6 tsp. chocolate cake frosting, any variety, any brand, i.e. Dunkin Hines, Betty Crocker, etc. Blend in a bowl with spoon -- spoon one teaspoon dollap on top of each cookie. Serve warm with milk! Or, cover and carry to any special event. Convert this into a Christmas recipe, by frosting each cookie with vanilla icing, and topping with red or green sprinkles. You may even use Christmas shaped cookie cutters, available from your online craft retailer, to shape cookies.
