Akuri- The Perfect Choice To Add Spice To Your Morning

We admit that plain bun maska with irani chai is the ideal parsi breakfast to greet the morning. However, if you wanna add your part of protein and also some masala to bring a zing in the pleasant morning, do try Akuri. Akuri is spicy scrambled egg that is taken in accompaniment with bun. Check out the recipe which is so simple yet tastes heavenly.

All you need are eggs (2), tomato (1 small chopped), onion (1 small chopped), ginger garlic paste (half a tsp), green chillies (2 chopped), coriander leaves (1 tbsp finely chopped), pepper powder and garam masala powder (one-fourth tsp each), salt, oil and whole cumin (one fourth teaspoon).

Coming to the procedure, heat oil in a pan and add whole cumin. Once it splutters add onion and ginger-garlic paste. Fry for a minute till the onion turns translucent and then add the green chillies and tomatoes. Add salt, give a stir and cover. Wait for a minutes till the tomatoes turn mushy. Once the tomatoes melt down add the powder spices and frry for another minutes and switch off the flame. Allow the mixture to cool down for say 2 to 3 minutes. Then add the beaten eggs and ...
... mix thoroughly with the spiced onion-tomato.

Note that we are adding the egg after switching off the flame and also bringing down the temperature of the mixture to some extent. This is because if you add egg while still in flame or heated condition, it will soon coagulate and will not get mixed thoroughly with the mixture.

Once you have mixed thoroughly, switch on the flame again and cook while stirring continuously till the eggs coagulates with the masala within its coats. Add coriander leaves and serve hot with butter bun.
