Make Your Morning Better With Butter-try Brun Maska

If you have ever been to Mumbai, one thing that you must remember about the city is that its breakfast. Yes, you guessed it right. The authentic Parsi breakfast with milky Iranian chai and bun or brun smeared with good dollop of butter is something you can't just forget. Also having them in the most suited ambience that is in those small Parsi cafes doting the streets of South Bombay is an experience to treasure forever.

However, whenever I talk about this mouth-watering breakfast experience, many people ask in confusion what is the difference between bun and brun pav. Well, now I am in a fix. I am certainly not an Irani food expert but somewhat expert in Google search. So here's the answer. Simply put, bun is softer and a bit sweeter. And a brun is that which has a hard crusty outside with extremely soft inside. Knowing this much, I got more curious to know how brun is actually made such that it gets such unique characteristics. So I googled and here is the full recipe that I found.

To make brun pav, all you need are 2 cups of warm water, 1 tablespoon active dry yeast, 1 tbsp sugar, 4 cups of flour, 1 tea spoon ...
... salt, 2 tbsp oil and 1 tbsp softened butter. In a small bowl mix together half cup warm water and sugar. Sprinkle the yeast over it and wait for ten minutes till the mixture becomes frothy. Now in another bowl mix flour, salt, yeast mixture and the remaining water. Knead well. When the dough starts leaving sides add oil and butter and knead further to a smooth dough. Divide them into 6-8 equal parts depending upon the size of brun you want and shape them into balls. Place them in a greased baking tray leaving enough space between them. Cover them with wet kitchen towel and give them a rest such that they grow double the size.

Now comes the main part i.e. baking and here lies all the magic. Instead of baking simply, these are actually steam baked which gives the bread its characteristics hard crust and soft core and turn it into our popular brun pav. Preheat the oven and place a baking dish with water in it right in the lowest counter. This will produce the required steam. Place the tray with doughs above and bake for 30 min or untill the crust is golden brown.
