Kathi Roll, that one word is enough to trigger your senses at once. The very word plays magic in you by watering your tongue, striking your nostril with the imagery aroma, and blurring your eyes with the memories of Kolkata. Have you ever wondered where from this wonderful recipe originated? And How? Well, today I will tell you the story of birth and history of the famous Kathi Rolls.

The Kathi roll is also spelt as Kati roll and is known to have originated from Kolkata. It is a popular Kolkata street food as we all may know and is available almost at the every junction of the city. The famous Nizam Restaurant of Kolkata is known to be the creator of this famous delicacy. Even they had held the monopoly of serving these rolls for quite some decades before it spread out at large to all over Kolkata, then India and finally aboard.

There are many versions of stories available regarding the origin of this recipe, but two out of them are most popular. During the British rule, Kolkata (then Calcutta) was the capital city and therefore a busy one. Not having time to sit for a proper meal at home, Calcacians were looking ...
... for options that they can have on the go. And that gave birth to the Kathi roll. The meats are kebab-ed and then rolled inside the oil fried flat breads. Even the fibre content was maintained by adding finely cut fresh onion, cucmber and cilantro with a fine dash of lemon juice. The entire thing is then rolled and wrapped in a paper napkin and thus making it easy to hold and also having it while even walking down the street. Having meat, flour and fresh vegetables, it is perhaps one of the oldest example of balanced meal wrapped into one.

The other version of the story is quite fascinating, which says that the British babus were too picky and didn't liked to spoil their hands by touching the oily kebabs. However, they also couldn't avoid them because of its heavenly taste. So to solve this problem, Nizam came out with the idea of rolling the kebabs in flat bread and finally in paper napkin such that the babus could savor tasty kebabs without spoinling their hands.

Personally, kathi roll is one of my favorite too. Just grab and eat. It just don't interfere with your present work. Once while I was pouring out my emotions speaking about the roll, a friend of mine asked, why is it particularly called Kathi. Ok, then I had no answer and so I gave a quick search. Nizam originally used to roast the kebabs in iron skewers. But when the demand rose and iron become much costly, they came down to use slited bamboos for the same. These slited bamboos are commonly called in Bengal as Kathi or Kati and that's where the name has came from.
