The story of cakes and human civilization goes hand to hand. People have learnt to make cakes ever since they discovered flour. Neolithic people made a form of cakes which were made from crushed grains and then moistened, compacted and probably cooked on a hot stone. The Neolithic cakes were simple and primitive in its form and making. And the first culture with significantly advanced baking skills was the ancient Egyptians. They were also the first to use wild or natural yeast to make dough rise. The Egyptians were the world’s first great bakers and they had large-scale bakeries that produced unleavened breads and cakes. But their cakes were still more like bread and sweetened with honey instead of sugar. The Greeks also used to called cakes by the name of ‘plakous’ from their word for ‘flat’. The cakes were usually combinations of nuts and honey and they also had a flat and heavy cake called ‘satura.’ The Romans called their cakes as ‘libum’ which were primarily used as an offering to their gods. The cakes later became to be known as “Placenta” which was more like a cheesecake, baked on a pastry base, ...
... or sometimes inside a pastry case. The modern day form of cakes came only much later in the early 19th century when baking soda and baking powder were also invented for use in baking.

The word “cake” is of Viking origin and it comes from the Norse word “kaka.” Many cultures all over the world used cakes in religious rites and ceremonies .They were used as offerings for the gods and spirits. The Chinese baked moon cakes during the Harvest Moon festival in honor of the lunar goddess. The Irish too has a tradition of rolling down cakes from a hill during their Beltane festival which was supposed to be an imitation of the solar cycle. The origin of birthday cakes can also be traced to the ancient German festival of Kinderfest. Many different cultures from all over the world still follow some kind of cake traditions. Cakes have also retained their ceremonial importance and they are essential in many modern day celebrations such as birthdays, weddings and anniversaries.

In the olden days, cakes were a novelty item meant only for the rich and ruling class due to the high cost of ingredients. But with developments in technology and advanced baking techniques combines with increased grain production let to a reduction of baking costs. Cake production also increased and became affordable for all the masses and also universally popular food. They are the favorite food item of many people all over the world and they are can be found in restaurants, bakeries and online stores.
