An Overview Of The Wood Fired Ovens
With the brick oven we all know today being attributed to the traditional Romans. Brick wood-burning ovens unveiled in ancient ash-covered city are still in awesome condition and will be used nowadays with some trendy and simple alterations. Medieval ovens of this kind are still found throughout in Europe and vary slightly from the actual Roman dome design and shape, enabling heat to be created directly within the oven chamber and discharged through the front.
In northern European countries ovens like these principally belonged to very wealthy land and property owners like royalty, lords, dukes, and earls. They had a tendency to be larger than the Roman model and servants were charged with keeping them fired and cooking with them.
Ancient Roman ovens were more frequently than not family in hand and operated and they were smaller in size to accommodate for domestic use. The Roman domed-style oven will simply be attributed to Italy's wood fired oven for the pizza industry as it's better-known nowadays. In fact, it looks that round wood-burning ovens made from the local stone and sun-baked bricks have been around ...
... on the Italian Peninsula since before the Roman Empire even existed. Just every Italian house, country home and house has, or once had an original brick or stone wood-fired oven, many of which are still completely functional nowadays.
The Indian sub-continent and central Asia boast an original version of a wood oven known as a tandoor which can be compared with the Roman style as a matter of fact. A tandoor may be rounded, up-right clay or metal oven that cooks in a similar manner as the Roman model does since the heat was conventionally generated by a charcoal or wood fire but, the heat source in the bottom of the vessel underneath the wood fired oven recipes thereby exposing the food to different types of cooking techniques, like convection. Smoking created by fats and juices that drip onto the heat source as the food cooks and is an inherent a part of the tandoor cooking experience. Like the tandoor, the Roman oven contains the fire in the oven itself, still it is off to one side, making a tremendously hot surface like that of a tandoor(480C (900F)) on that to cook, making them perfect for pizzas or other flat breads.
Different from the Asian and Roman models, the French style wood-burning oven adaptation also referred to as a White oven includes a separate combustion chamber below the kitchen appliance, like the Alfa Pizza wood fired oven and smoker but on a much bigger scale. These ovens are effective in cooking multiple loaves of bread at a time and are still used nowadays all over the world.
