Mumm champagne comes from the Northernmost wine producing regions in France, and today more than 70% of the mum champagnes are produced as Non-vintage. The champagne is not just ordinary champagne, it is manufactured under strict quality control system referred to as Méthode Champenoise." This method involves the pressing and fermentation, and then a blending phase follows before the champagne is temporarily bottled and capped. After temporary capping, a second fermentation is performed and this involves the addition of a blend of Yeast and Sugar and the released Carbon dioxide is kept inside the bottle. With the aid of a racking process, the sediments left in the bottle are removed and collected in the neck.
The process of making mumm champagne is not always straight forward, while some wines move through the traditional processes within a couple of months, others are made to age after the riddling phase in order to create more complexities and depth. Mumm champagne comes in a wide range of brands, these include; Dry, Brut and sweetened. In most cases, Pinot Noir, and Chardonnay grapes are used in creating the finest blends. “Blancs de blancs” is a special mumm champagne produced from Pinot Noir blends only. A Vintage mumm champagne will age quickly and gracefully to bring out the best taste and flavor while some can take more days to age.
