Want To Cook Smoked Duck Breast? Here’s An Easy Smoked Duck Breast Recipe To Get You Started
Moulard ducks are prized because of their breasts, which are bigger than those of most other species of duck. These birds produce fois gras (fat liver) thanks to specific breeding tactics including force-feeding corn. Here’s a smoked duck breast recipe for a great fettuccine dish. It makes two entrée portions.
YOU NEED: 1 Tbs butter; half cup julienne ...
... carrots; 2 Tbs sliced sun-dried tomatoes; 4 sliced smoked portabella mushroom caps; half cup leeks, julienne; 1 tsp garlic, minced; 2 oz. Madeira wine; 12 oz. split and sliced smoked duck breast; 8 oz. heavy cream; 8 oz. chicken broth; 2 cups Asiago cheese, grated; 1 Tbs parsley; 1 Tbs chopped chives; half tsp pepper.
DO THIS: Saute the carrots in a pan with butter over med. heat for one minute. Add mushrooms, tomatoes, leeks and duck, and sauté for two more minutes. Take duck out and put on warm plate. Add the garlic to the pan and stir. Raise heat to medium-high, then add the chicken broth and wine. Mix everything together and continue to cook until liquid is reduced by half..
Now add the cream and mix. Simmer until cream is half reduced. Add the fettuccine, mix well to coat, then pour onto two plates. Top with the sliced duck breasts. Sprinkle with cheese, parsley, chives and pepper..
