Traditionally, tagines are made of heavy clay and then engraved, glazed or crafted with flowery or geometric patterns on the outer surface. The tagine consists of two pieces- the base (shaped like a bowl) and the cone shaped cover which is placed on top of it during cooking. The cone encourages moisture build up that eventually condenses and returns to the bottom.

A Moroccan tagine is typically used for slow preparation of certain meats such as the shank, neck or shoulder of a lamb. This cooking process ensures that the meat falls off the bone at the end. After the food is deemed cooked, the lid is removed and the base is used as a serving dish and immediately placed on the dining table.

Some of the most suitable recipes for this cooking style include Moroccan lamb stew and Moroccan vegetarian stew. ‘Mqualli’, ‘Kefta’ and ‘Mrouzia’ are also popular tagine based dishes. You can use homemade bread or couscous or even rice as accompaniment for the meal. Make a kettle of Moroccan mint tea, and you’re all set to go.

Moroccan tajines may be used outdoors on indoors. And you can choose to cook with over a stove or a charcoal burner. However, always remember to wipe them clean before cooking anything with them. Also, use oil to ensure that nothing sticks to the bottom of the pot.

Lastly, tagine cooking is a great way to bring the family together for a great meal. Stews and other dishes cooked in these traditional clay pots are bound to be a great hit with every guest you invite.
