His favorite French fries are the ones that Les Halles make. To begin with the potatoes need to be peeled and cut into the desired shapes and left overnight in cool water and washed to remove maximum starch. They then need to be cooked for 6 to 8 minutes in oil and then they need to rest for 15 minutes. These blanched potatoes now need to be fried for 2 to 3 minutes until they are crisp and golden brown. The fries now need to be dropped into a larger bowl which is lined with a clean dry towel and it needs to be salted and the towel has to be whipped off. The fries can be tossed around the bowl and served while they are still hot. Sounds yummy, isn't it?
