During the warm-up stage, approximately 205 degrees – 207 degrees Celsius, the bean make similar cracking sounds as popcorn and change into a yellow tint. The dark roasted coffee is a dark brown/ chocolate colored shade.

Jamaica Blue Mountain Coffee is initially roasted under lower temperatures than most coffee beans at the warm-up stage. This is done to prevent the roast from being too dark because of the low density of the coffee beans. The ideal Jamaica Blue Mountain Coffee roast brings it to a yellow/light-brown color. The coffee beans are typically roasted in Drum machines because the initial environment temperature of less than 350 degrees. After a few minutes the temperature is raised to gradually to keep consistent heat to the coffee beans. For hot-air coffee roasters, it is important to roast 20% less beans at a less than Drum machine. This should allow more air flow and an even warm-up of the coffee through the initial darkening stages.
Coffee roasters can change the quality of the coffee bean. Coffee fanatics can purchase small roasters for their own homes. They can have more control over the flavor and the freshness of their coffee. Most coffee is distributed commercially and shipped from other countries. The ideal coffee product would have a long shelf life and maintain freshness.
