Perceptions of food have been dramatically altered due to globalization catching the attention of overseas consumers also and changing the profile of food markets along with attractive consumer packages. With a unique pattern of production, processing and marketing/consumption of milk, there are 70 million rural household engaged in milk production. This truth itself speaks about the tremendous scope of moving ahead with commercial production of dairy food products as an imperative agri-business sector and nutritional food security on much larger scale. Still there are efforts to increase the production, because finally, the dairy products industry depends upon more and more production of quality milk. Perspective 2010, involving the efforts of NDDB, includes four thrust areas: Strengthening the Cooperative Framework, Productivity Enhancement, Quality and Plant Management and National Information Network. Also the government’s action plan includes:

1.Increment in awareness among farmers about good quality milk.
2.Training to farmers on hygienic habits at farm level and collection centres.

5.Commercial production of dairy products in India is taking its organised shape through developments in technologies, novel machinery, value additions, nutritional value enhancement, fulfillment of consumer’s requirements, fast and safe packaging, varying tastes, awareness about healthy and safe dairy products etc. To meet the international demand, mechanized process technologies have been developed for the manufacture of the sweets and other traditional dairy products also, which has not only increased the shelf life but also standardized the quality. Sea changes in market economy and scenario along with entry of private sector in the field of milk products on real modernized and technologically rich levels in organised manner and involvement of Food Engineering and Technology transformed the industry into highly commercial one to better extent. Also it is expected that consumption of dairy products in India may have an annual growth rate of 20%, which is really mark able as compared to many countries in the world. From indigenous to contemporary and then functional milk products, the research and value addition are subjects of concern for people involved in the sector along with regular additions in different aspects, food safety concerns, packaging aspects, exports etc. There is enough stress on quality factors, composition, sensory aspects, shelf life, physiochemical characteristics, packaging, industrial manufacture, technology and storage.
