Ice wine is produced from the frozen grapes grown in the various regions of Canada where the climate conditions favor the growth of grape varieties. Grapes are left hanging in the vineyards until freezing leads to dehydration and a concentrated mixture of sugar, acids and extracts remains. Harvesting is then done manually only when the temperature reaches -10 to-13°Celcius. The grapes are then pressed to obtain the juice which after fermentation process turns into ice wine. It must be noted that no artificial freezing is allowed and the grapes are handpicked otherwise the resultant ice wine would lack its original taste. As winters in Canada are longer than in other wine regions of the world, Ice wines from Canada are found to be high on alcohol content.
