Hearty Homestyle Beef Stew: A Classic Comfort Food Recipe

Ingredients:
2 pounds beef stew meat, cut into 1-inch cubes
¼ cup all-purpose flour
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
6 cups beef broth
1 cup red wine (optional)
3 carrots, peeled and sliced
2 potatoes, peeled and diced
1 teaspoon dried thyme
1 bay leaf
Salt and pepper to taste
1 cup frozen peas
2 tablespoons tomato paste
Fresh parsley, chopped (for garnish)
Instructions:
Prepare the Beef: In a large bowl, toss the beef cubes with flour, salt, and pepper until they are well coated.
Brown the Beef: Heat olive oil in a large pot over medium-high heat. Add the beef in batches and brown on all sides. Remove the browned beef and set aside.
Sauté Vegetables: In the same pot, add the chopped onion and cook until translucent. Add the minced garlic and cook for another minute.
Deglaze and Simmer: If using wine, pour it into the pot to deglaze, scraping up any browned bits. Add the beef broth, browned beef, carrots, potatoes, thyme, and bay leaf. Bring to a boil, then reduce ...

or until the beef is tender.
Add Final Ingredients:
Stir in the tomato paste and frozen peas. Cook for an additional 10 minutes. Remove the bay leaf and adjust seasoning with salt and pepper.
Garnish and Serve: Serve the stew hot, garnished with freshly chopped parsley.
