Ingredients
1 small onion, diced finely
4 hamburger buns with sesame topping
300g minced steak
1-tablespoon sunflower oil
a tiny wedge of shredded iceberg lettuce
two slices of burger cheese or mild cheddar
1 gherkin, cut lengthwise and served with oven fries.
Method
step 1:Pour just enough hot water from the kettle to barely cover the onions once you've placed them in a small dish. Allow cooling. In a separate small dish, combine all the sauce ingredients. Add 1 tbsp of the cooled onion water, and stir to thoroughly blend. Place aside.
step 2:Cut a thick slice from the center of the remaining two burger buns after halving the other two. The other buns should only be grilled on the cut sides while the center slices should be toasted or grilled on all sides. Oven temperature set to 100°C/80°F fan/gas 2
step 3:Season the mince before dividing it into four separate heaps. One of the meat piles should be placed in a heavy skillet or frying pan that has 14 tbsp of the oil heated over high heat. Be wary of the heat and rising steam as you rapidly cover with a sheet ...
... of baking paper and delicately press the beef patties onto a second pan. Remove the paper and weight after approximately 10 seconds and let the patties cook naturally for a further 2 minutes. Cooking for a further minute after turning the patties and pressing them down with a spatula. While you prepare the remaining burgers, transfer them to a tray and reheat them in the oven.
step 4:It's time to put the burgers together once all of the patties have been cooked. A burger, lettuce, a slice of cheese, some gherkin slices, and a central slice of toasted bread are all placed on top of some sauce that has been spread over the bun bases. More sauce should be spread over, followed by additional onions, lettuce, one more patty, and the bread tops. If desired, serve with oven fries and more sauce on the side.
For the secret sauce

PICKLE RELISH
Gherkins and onions are simmered with a sweet and sour concoction of sugar and vinegar to create this chunky sauce. It's a classic American side dish for hot dogs and hamburgers and is frequently included in "secret" burger sauces.
