Another healthy recipe that requires only 15 mins to cook is Baked Mixed Vegetables Recipe. It is Indian cuisine, served during dinner. The ingredients needed are:
• 3 medium Brinjals,
• boiled 4 potatoes of medium size,
• 1 medium green capsicum,
• 1 medium red capsicum,
• 2 medium onions,
• 4 tbsp Garlic and Oregano Nutralite,
• salt as per taste,
• ¼ cup vegetable stock,
• 10-12 crushed black peppercorns,
• ¼ cup fresh bread crumbs,
• ¼ cup of grated cheese,
• Tomato sauce and cheese sauce.
Method: Before starting to cook, preheat the oven to 200 Degrees Celsius. Slice all the veggies and keep them separately. Now take the brinjal slices, add salt to it, and leave for 30 minutes. After that wash with cold running water, and dry well with the help of paper towels. Arrange the slices in a bakery tray and allow them to grill in the preheated oven till they turn golden brown. Then take a non-stick pan, pour 2 tbsp of Garlic and Oregano Nutralite, and allow to heat. Add garlic and sauce for a minute. Add red and green capsicum and cook for 1-2 mins. Boil tomato sauce, cheese sauce, and vegetable stock, and then strain it. Take a baking dish, add onions, red and green capsicums, above the layer add brinjals and potatoes, sprinkle salt, and crushed black peppercorns in every layer. Pour the sausage over it, and sprinkle bread crumbs along with grated cheese. Bake the entire thing for 20 mins in the preheated oven. Once the cheese turns golden, the recipe gets ready to serve with brown bread.
