Tunnel oven − This comes in forms of direct fire, and indirect fire. It suits for baking at high temperatures.

Griddles
They are flat iron, stainless steel, or aluminum plates that transfer heat to the food. Griddles are susceptible to loss of heat when part of the plate is not in use.
They are used mainly to prepare breakfast products like omelets, scrambled eggs, patties, sandwiches, burgers, and pancakes. The excess grease usually needs to be washed away from the surface periodically to avoid tempering. Caramelization happens in case of steel griddles, if the surface is not kept clean. Grids with teflon surfaces are more stable and effective.
There are a wide range of pans, pots, and spoons used for cooking.
Pans − The cook selects a roasting pan according to the method of cooking. The pans are used to roast, boil, and deep fried shallowly.
Pots − The pots are used to prepare stocks and to cook. In general, they 're accompanied by lids. Vaporized foods such as beans, momos, and idlis (fluffy beans dumplings) are prepared with steamer. There are two variants − superficial and strong.
Spoons − The spoons help to test liquid consistency, solids tenderness, stir and move the food into the pots and pans. Specific spoons are skimmer, turner, masher, ladle, fork-spoon and utility spoon used during cooking.
Kettles
The kettles are used for cooking, heating, and food storage. They are two layered pots- one within the other for steam with a gap in between. They are normally jacketed, tilting agitator for better visibility and handling of the food. The kettles also have a material discharge valve which allows an efficient transfer of the kettle material to a service area without damaging the delicate foods.
Vegetable Cutters/Choppers
The cutters or choppers are used in different shapes and sizes for chopping, dicing, shredding, and slicing of vegetables. These are also used for cutting puddings or soups into small pieces of bread. The handheld cutters are used for fruit cutting, salad cutting etc.
The cutters are either made of plastic or of stainless steel. Some cutters come with zig-zag or plain-edge single or multiple wheels. Many cutters have a small tiny bowl-like shape to cut small fruit pieces.
Mixers
The vertical overhead motor mixer is most widely used in commercial food processing systems. Mixers are used for blending and mixing. There are two types of mixers commonly available − table mounted and floor mounted.
